Everyone loves pizza and it is not fun missing out on this Italian delicacy.
We do pizza nights every weekend in our house, and the kids love my homemade pizza.
It isn't the traditional way to make pizza, don't tell the Italians! But it sure caters to anyone and avoids wheat and yeast which is problematic to some.
Ingredients for dough(for 2 medium pizzas):
300g plain flour (spelt or GF)
3 heaped tsp of baking powder
2 tbsp of nutritional yeast (optional, but adds flavour)
2 tsp of oregano, dried
160ml water
Toppings:
Passata or tomato paste
Grated cheese (sheep's, goat's, or dairy or vegan cheese)
Onions, mushrooms, courghette, meat - whatever you fancy
salt and pepper
Method:
Preheat the oven to 240C
In a bowl, put all the dry dough ingredients and mix
Add the water and mix into a round dough
Split in to two equal balls
On non-stick baking paper, get a rolling pin and smother the pin in olive oil.
Roll the dough evenly until about 1 cm thick (the olive oil stops the pin sticking to the dough)
Put on the tomato paste/passata then the cheese, and the rest of the toppings
Pop in to the hot oven and cook for 10-14 mins (depending on your oven - some cook faster/slower)
Enjoy! You can double the recipe for a family of 4.
